Romantic, Intimate, Charming”

Greg and I met through a mutual friend and colleague, Mary. Right after Hurricane Sandy hit our neighborhoods, we spotted each other at a bar where Mary’s daughter, Alexandra, was bartending. Greg and I are both educators; I am a teacher for special education and theater arts, while Greg is a high school Italian teacher. We talked all night, made plans to go on a real date, and four years later moved in together!

We took a huge step and bought a house in Bayonne, New Jersey. On Christmas Day the next year, Greg proposed. We were sitting next to our tree alone in our quiet living room filled with joy. It was romantic and intimate and full of happy tears.

The weather was a crisp and refreshing 56 degrees with beautiful skies. Our guests were greeted with blankets “to have and to hold in case you get cold,” and beautiful music arranged by my sister, Meghann, a Broadway conductor. The ceremony was officiated by Mitch the Minister, who provided plenty of laughs, but also incredibly sentimental moments. The reading “Blessing of the Hands,” was read by Alexandra, the daughter of our matchmaker, while Mitch performed a knot tying ceremony, a tradition that has Greek, Roman, and Irish roots, our heritages.

The biggest hit at cocktail hour was the pretzel bar. “They tied the knot, so grab a pretzel while they’re hot!” I showed the Grand Oaks staff a picture from Pinterest of a pretzel bar with dipping sauces, and within weeks, they had custom made the entire display for us! Another hit was the ready-to-order sliders bar. Everyone loved being able to mingle inside or outside as they pleased. The upstairs ballroom at Grand Oaks is a beautiful, long room, with tables surrounding the dance floor. At the head of the room, behind the sweetheart table, is a semicircle of floor-to-ceiling windows leading to a balcony with a white brick chimney and lantern lighting. Barbara Bell, our florist, designed beautiful garlands and bouquets, and brought tons of beautiful pumpkins and candles to add a romantic touch. The tables were all white with burgundy napkins, with the sweetheart table in reverse colors.

For dinner, a Caesar salad with parmesan was served at the table, followed by delicious tortellini pasta. Then our guests had a choice of braised short ribs, chicken Francese, and macadamia nut-crusted mahi mahi. The cake was a white cake with French cream, chocolate mousse, and strawberry filling, with fresh whipped cream. Espresso, creamy iced coffee mousse, and other coffee treats were prepared by the Grand Oaks Barista Bar in their newly renovated room adjacent to the ballroom. Music 2 the Max had the dance floor packed all night long, and during the first and second courses of the meal, they played classics loved by all ages. At the end of the night, a live drummer came out and lit-up hand tambourines were passed out.  Everyone had a blast!
